Raisin-Cinnamon Bread according to Medical Medium

Raisin cinnamon bread, gluten-free/organic/vegan

Aromas like cinnamon and raisins give us the warmth we crave in the cold season. They give us a homely feeling of security, so we can relax better. The scent of cinnamon also brings back childhood memories of beautiful and carefree winter days. Take a break and relax with a cup of tea and enjoy our wintery raisin and cinnamon bread.

You need the following ingredients:

1 pack of KUSTURA wholegrain oat bread baking mix
1 pack of baking powder
150 g coconut blossom sugar (or to taste)
70 g raisins (or to taste)
6 g Ceylon cinnamon (or to taste)
150 ml unsweetened apple sauce
350 ml water

Put the baking mix in a bowl and mix it with all the other dry ingredients (baking powder, coconut blossom sugar, raisins, cinnamon) and stir well. Mix the water with the unsweetened apple sauce and add it to the bowl with the dry ingredients.
Using a hand mixer with a dough hook, mix the dough for about 2-3 minutes until it is homogeneous. I use an oblong glass loaf pan for this recipe because I get the best baking results with it.
I grease the glass mold with coconut oil, as it is ideal for high temperatures. Now put the dough into the greased baking mold and preheat the oven to 180 °C.
I bake the raisin cinnamon bread on the second rack from the bottom for about 1 hour and 40 minutes. After baking, immediately take the raisin cinnamon bread out of the tin and wrap it in a clean tea towel to cool. If you want to enjoy it while it's still warm, cut the bread from the bottom with a bread knife.
