Raisin cinnamon bread recipe

Raisin cinnamon bread, gluten-free/organic/vegan

Flavors like cinnamon and raisins give us the warmth we long for in the cold season. They give us a homely feeling of security, so that we can relax better. The scent of cinnamon also awakens childhood memories of beautiful, carefree winter days. Take a break and relax with a cup of tea and enjoy our wintery raisin and cinnamon bread.

For this you need the following ingredients:

1 pack of wholemeal oat bread baking mix from KUSTURA
1 pack baking powder
150 g coconut blossom sugar (or to taste)
70 g raisins (or to taste)
6 g Ceylon cinnamon (or to taste)
150 ml unsweetened applesauce
350ml of water

Put the baking mix in a bowl and mix it with all the other dry ingredients (baking powder, coconut blossom sugar, raisins, cinnamon) and mix well. Mix the water with the unsweetened applesauce and add it to the bowl with the dry ingredients.
Using a hand mixer with a dough hook, mix the dough for about 2-3 minutes until it is homogeneous. I use a long glass loaf pan for this recipe because it gives me the best baking results.
I grease the glass mold with coconut oil, as it is ideal for high temperatures. Pour the batter into the greased baking pan and heat the oven to 180°C.
I bake the raisin and cinnamon bread on the second rack from the bottom for about 1 hour and 40 minutes. After baking, immediately take the raisin cinnamon bread out of the mold and wrap it in a clean tea towel to cool. If you want to enjoy it while it's still warm, use a bread knife to cut the bread from the bottom.
