Linzer Hearts – delicate, fragrant, and full of love
Sometimes, it doesn't take much to make someone smile. A small pastry heart, filled with jam and baked with love, can be just the thing – for Valentine's Day, for a special moment, or just because.
Our KUSTURA baking mix "PIZZA & MORE" isn't just for pizza. It's versatile, uncomplicated, and wonderful for delicate pastries like these Linzer Hearts.
For this recipe, you'll need:
225 g "PIZZA & MORE" from KUSTURA
200 g ground blanched almonds
80 g coconut blossom sugar (or other sugar to taste)
Zest of half a lemon
1 pkg. vanilla sugar or some ground vanilla bean
100 g coconut oil (melted)
80 g water
a little rice flour for dusting
Filling: 200 – 250 g redcurrant jam
Preparation:
Put all dry ingredients in a bowl (baking mix, almonds, sugar, lemon zest, vanilla or vanilla sugar) and mix them with a whisk.
Add the melted coconut oil and water and mix the dough with a hand mixer with dough hooks or simply with a wooden spoon. Then continue to knead the dough with your hands until you have a dough ball.
Don't forget to flour your work surface where you want to roll out the dough.
Now halve your dough ball and roll one half evenly thin (approx. 3 mm) with a rolling pin.
Use a heart-shaped cookie cutter.
Your Linzer Hearts can now be effortlessly lifted from the work surface with a butter knife and placed directly on a sheet of baking paper. (Do the same with the remaining dough.)
Bake your Linzer Hearts in the preheated oven at 180°C top/bottom heat on the middle rack for approx. 10 minutes.
(Tip: First bake only one cookie as a test to determine the perfect baking time for your oven and your dough thickness.)
Let the Linzer Hearts cool briefly and in the meantime heat the redcurrant jam.
Now spread one Linzer Heart with jam and join it with another Linzer Heart.
