For this recipe you need the following ingredients:

1 pack of KUSTURA “PIZZA&MEHR” baking mix (gluten-free, organic, vegan)
250 g coconut blossom sugar
200 g ground poppy seeds
1 tsp Ceylon cinnamon (or to taste)
200 ml unsweetened applesauce
400 ml water
2-3 apples (peeled, cut into cubes or wedges

Preparation:

Pour the "PIZZA&MORE" baking mix into a bowl and combine it with all the other dry ingredients (coconut blossom sugar, poppy seeds, cinnamon), stirring thoroughly. Combine the water with the unsweetened applesauce and add it to the bowl with the dry ingredients.

Using a hand mixer, mix the dough until smooth. For this recipe, I use a medium-sized baking sheet (approx. 30x37 cm). I grease the baking sheet with coconut oil, as it's ideal for high temperatures.

Now pour the batter into the greased baking pan, smooth it with a wet spatula, and top with diced or sliced apples. I bake the apple poppy seed cake on the middle rack at 200°C (400°F) using top/bottom heat for 40 minutes.
