Olives have a rich history dating back 20 million years, when wild olive trees grew in Italy and the Mediterranean. People in the Mediterranean began cultivating olives as early as 7,000 years ago.
They are rich in monounsaturated fatty acids and also contain antioxidants that help reduce inflammation and boost the immune system. Olive bread is a delicious treat that combines Mediterranean flavors with healthy ingredients. The addition of olives not only gives the bread a unique taste but also numerous health benefits.
For this recipe you need the following ingredients:
1 pack of "PIZZA & MEHR" from KUSTURA baking mix
(gluten-free, organic, vegan)
7 g sea salt (or to taste)
about 15 green olives, or to taste (whole, pitted)
2 tablespoons olive oil
400 ml lukewarm water
Optional: some olive oil with chopped garlic for brushing
Pour the baking mix into a bowl, season with salt, and add the whole olives. Add the olive oil and water to the mixture and mix with a hand mixer with a dough hook or a food processor for about 2 minutes.
Let the dough rest for 10 minutes, then dust with a little tapioca starch or rice flour and shape into a loaf. Bake the bread on the middle rack of a preheated oven at 200°C (top/bottom heat) for 80 minutes. (If possible, use a pizza stone; otherwise, line a baking sheet with parchment paper.)
Remove the bread from the oven, brush with olive and garlic oil, and bake for another 10 minutes. Then wrap the finished bread in a clean kitchen towel and let it cool thoroughly!
TIP! If you don't use olive and garlic oil, please allow 90 minutes for the baking time.
