For this recipe you need the following ingredients:
1 pack of "PIZZA & MEHR" from KUSTURA baking mix
(gluten-free, organic, vegan)
9 g sea salt (or to taste)
1 small potato (waxy)
1 small onion
some ground black pepper
2 tablespoons olive oil
400 ml lukewarm water
Pour the baking mix into a bowl and mix with salt. Finely dice the onion and potato and place it in another bowl. Season the onion and potato cubes with pepper, mix thoroughly by hand, and add to the baking mix.
Then add the olive oil and water to the mixture and mix for about 2 minutes using a hand mixer with a dough hook or a food processor. Let the dough rest for 10 minutes, then dust with a little tapioca starch or rice flour and shape it into a loaf.
Bake the bread on the middle rack of a preheated oven at 200°C (top/bottom heat) for 90 minutes. (If possible, use a pizza stone; otherwise, line a baking sheet with parchment paper.)
Wrap the finished bread in a clean kitchen towel and let it cool thoroughly!
TIP! If you cut it too early, it might still be moist inside and look mushy.
