For this recipe, you will need the following ingredients:
1 pkg "PIZZA & MEHR" (pizza & more) from KUSTURA baking mix
3-4 tbsp coconut blossom sugar
3 tbsp melted coconut oil
400 ml oat milk (or other milk)
a little rice flour for dusting
3 tbsp melted coconut oil for brushing
Filling:
125 g coconut blossom sugar
100 g grated walnuts
Raisins as needed
2-3 tsp cinnamon or to taste
Preparation:
Place the KUSTURA baking mix "PIZZA & MEHR" in a bowl and mix well with some coconut blossom sugar. For the dough, first melt some coconut oil, add 3 tbsp of the melted coconut oil to the oat milk and add to the baking mix. Mix everything well with a hand mixer with dough hooks. Then mix coconut blossom sugar, cinnamon and walnuts in a bowl. Place the dough on the floured work surface , dust it a little more and first form a ball. With your hands, form a strand from the dough ball.
Place a piece of continuous baking paper (approx. 80 cm long) crosswise on the work surface and then place the dough in the middle of the floured baking paper, so you can roll out the dough beautifully with a rolling pin. First press on the dough with your palm and flatten it, then dust it and roll out the dough with the rolling pin. The dough should ultimately be approx. 45-50 cm long and approximately as wide as your baking paper.
Now drizzle the rolled-out dough with 3 tbsp melted coconut oil and spread it with a brush. Now spread your sugar/cinnamon/nut mixture on the dough and place raisins on top. Fold the lower part of the dough upwards by approx. 2 cm, lift the lower part of the baking paper with your hands and easily roll up the dough. Press the ends of the roll slightly to seal the roll. Now grease a Reindling mold with coconut oil.
The most critical part is lifting it into the baking pan (4 hands would be helpful).
Lift the roll together with the baking paper and carefully tip the roll into the baking pan. Brush the dough well with oat milk and bake at 190°C top/bottom heat on the middle rack for approx. 50-60 minutes.
Immediately invert the Reindling and let it cool completely wrapped in a clean kitchen towel.
